Fatzcarraldo is a great Simpsons episode with a well written plot and loads of very funny moments. It is a fun episode that serves as a great device for Homer. We get to see the character falling in to a crisis when all of Springfield's fast food chains become healthy, hilarity ensues as we see what he does to compromise the loss of his beloved snacks.
However, as a lot of episodes have been lately, it includes a very weak side story that is merely used for time killing. It is yet another example of one of the stories that end before they even begin, there is a complete lack of passion evident from the writers in crafting it, making it very disengaging for the audience.
The highlight for me is Deuce, who owns a hot dog stand that Homer starts to eat at. Voiced brilliantly by recurring voice actor Kevin Michael Richardson, he is a very quirky character who has very unpredictable dialogue, you truly never know what he is going to say next, I hope to see the character again in the future.
