Stefan concentrates on the 38 preservatives among the E-numbers, one or more of which used in most foods given the extreme modern demands of 'freshness'. First an experiment with pork, well half pigs, shows the impressive effect of table salt. Then he elaborates on how and why others chemical salts are used, although some are very toxic unless carefully dosed, and the need for them, recalling the historical nightmare scurvy.
