“Chaos cooking is a thing that I think I’m still wrapping my brain around,” says Kristen Kish to “Top Chef” All-Star Marcel Vigneron in the latest episode of her after show “The Dish with Kish.” Vigneron defines it as “a blatant disregard for all the rules, and it’s specifically up to the chef to do whatever they want. Kind of like fusion, but fusion on steroids.” Watch Kish and Vigneron take on the unusual culinary trend above.
There were two challenges in this week’s “Chaos Cuisine” episode of “Top Chef,” but in both cases cakes were among the best dishes. Michelle Wallace won the Quickfire Challenge, which was to make a dessert highlighting dairy; her dish was a corn cake with mascarpone cheese, lemon zest and basil cream. Then Dan Jacobs was one of the top four chefs in the chaos cuisine Elimination Challenge with his seafood-topped funnel cake.

About half of the “Top Chef” contestants made variations of the same thing this week, “which is wild to me,” said Kristen Kish in the third episode of “The Dish with Kish,” which followed the “Top Chef” episode “Take it Cheesy” in which the cheftestants, naturally, made cheese dishes. But considering how many different ways there are to highlight cheese as an ingredient, it was surprising how many of them chose to make croquettes. So that’s what Kish did for her after show. Watch it above.

Los Angeles’ dining culture is as diverse as its neighborhoods and the people who inhabit them. And with each new restaurant opening, the scene becomes broadened by unique dishes, elevated cocktails and smart atmospheric design that add color and texture to the city. In a place where there’s no shortage of sunlight — and where bars and lounges close not long after midnight — a leisurely, thoughtful meal is oftentimes an afternoon or night’s main event. With this in mind, The Hollywood Reporter has compiled a list of places in L.A. (which will be ongoing) that have opened in recent months and are making eating out an event again.

When you were a kid, perhaps your parents hid their stash of grass while you secretly smoked your own weed. Fast forward to present day: your dispensary carries cannabis and your kid's favorite number is sure to be 420.
In this era of legalization, marijuana law isn't the only thing changing. The way we think and talk about about weed has changed. As we've grown up, so has broadcast television -- with TV stoners evolving from blurry-eyed, cartoon losers into high functioning adults with jobs.
Don't beweed me? On a recent episode of Grey's Anatomy, even the doctors were high on cannabis cookies! These days, getting baked on TV is not only acceptable, it’s often part of the story. (The funny part.) Consider this list of dope shows your gateway drug to high quality, small screen entertainment.

It looked like Brooke Williamson had the judges eating out of the palm of her hand during last week's Top Chef Duels when she won two challenges and twenty thousand bucks. But when it came down to executing a big-top themed three-course meal, it was Shirley who emerged the ring leader. Shirley's presentation and sense of whimsy had her flying high while Brooke juggled furiously to keep up.
Fans of Williamson have reason to rejoice: she may be down, but she's not out. Brooke competed against Marcel Vigneron in The Knockout, and prevailed. Now she's guaranteed a spot in the final round and a second chance to re-enter the Duels.

The first episode of Top Chef Duels revealed the exact format of the new series. Each chef gets a chance at ten thousand dollars by besting their rival at a challenge of their own design. The fact that Richard Blais and Marcel Vigneron each failed their own tests, demonstrates that none of the contenders can take anything for granted.
The final challenge, the one that determines who goes to the finals, and who heads to The Knockout, is pretty typical Top Chef fare. It does feel as if the elimination round was tailor made to fit Vigneron and Blais' strengths as molecular gastronomists.

Top Chef is currently cooking in rainy Seattle, but I'd like to offer some sunnier vistas: the ten hottest contestants in Top Chef history. We'll have to save our Tom Colicchio/Rocco Dispirito lust for another post.
In the meantime, take a look at these ten hotties, glare ominously into their eyes like an intrigued Padma Lakshmi, and fight with me in the comments about who should be ranked higher/lower/not at all.
10. Chris Crary (season nine)
You're working with some kind of charm when you can place ninth and still garner the Fan Favorite award, and as you can see, Chris Crary of Top Chef: Texas was working with some fine pectoral charms. Too bad my vision of that season is tainted by weird, vaguely mean-seeming guest judge Pee Wee Herman.
9. Hung Hunyh (season three)

Forget molecular gastronomy and the haute cuisine style which has turned the world's most famous chefs into wild scientists. A new style of cooking is heating up as home chefs and the pros looked to the distant past for inspiration.
Avant-garde cooking is having a very good year. The cooking style was recently canonized in Nathan Myhrvold's lavishly photographed, six-volume tome Modernist Cuisine: The Art and Science of Cooking. High priests of haute cooking, Ferran Adrià and Wylie Dufresne, best known for bringing laboratory techniques to the plate, traded in their whites for tweed and stepped into the classroom at Harvard. And on the Syfy channel, Top Chef alum Marcel Vigneron puts molecular gastronomy on display in Marcel's Quantum Kitchen.

When we were in college we had a friend who made it his mission to use Star Trek as the basis for every paper he wrote. Whether it was for a communications, English or Political Science class, he planned on looping it all back to Captain Kirk and Mr. Spock. Shockingly he pulled it off.
He was also the guy that turned us on to William Shatner singing “Lucy in the Sky with Diamonds.” He would silence a room of crowded college kids, so that everyone would be forced to bask in the glory of that performance. Had the Internet existed back then, he probably would have plugged a computer into a flat screen TV and made the partiers watch Shatner’s “Rocket Man” duet with himself. Sadly that wouldn’t be possible for a few (or more) years.
We lost touch with that...

When it was announced that Syfy was going to have a cooking show on their network, the groans, moans and complaints about the idea were loud and long all over fandom. Fans were crying out that wrestling was bad enough, but cooking? How was that going to be anything remotely connected to science-fiction? Well, folks, as shocking as this statement is coming from me, it is a fact that Syfy found a way to make "Marcel's Quantum Kitchen" a fit, thanks to the genius of the show's star, Marcel Vigneron. Marcel, with the assistance of the team he assembled, has taking cooking into a whole new universe using things that you just would not imagine being used to prepare food. Marcel is no stranger to the television audience, having appeared in the second season of .Top Chef," winding up as ...

If you watch Top Chef, then you know Marcel Vigneron. In fact, you may or may not have hated him at some point during the course of both seasons he appeared in. Basically, he was the show's controversial scapegoat. And let's be honest, it was entertaining to watch. Sadly, it did sometimes take away from the fact that he's a super talented cook too.

Fans of Top Chef know that Marcel Vigneron is more than just a chef: he's a scientist. And now he's taking his molecular gastronomy to the party circuit with his new series, Marcel's Quantum Kitchen, airing Tuesdays on the Syfy channel. Each episode revolves around a different event that Marcel and his company, Modern Global Tasting, is catering, from the brainstorming process to the finished food artistry. And unlike his "asshole edit" on Top Chef, Marcel mostly comes off as an entertaining magician. No wonder his unique talents are in high demand, from firefighters to the stars of The Real Housewives of Beverly Hills... "I'm going into the cougars' den," Marcel laughed about...

A cooking show on Syfy? Sure, it may seem a bit of a weird fit but wrestling already hasa home here, so why not? 'Marcel's Quantum Kitchen' (Tue., 10Pm Et on Syfy) even promises to spotlight Marcel Vigneron, the 'Top Chef' runner-up's techniques with cool gadgets in the kitchen.
Well, it does that but for the most part it's like every other cooking-based show. In fact, all the fancy gadgets in the world won't help if you miss fundamentals like making sure you verify the oven is empty before you turn it on. That's Cooking 101, folks.
Even worse, Vigneron told his chef to check the oven when he turned it on. So not only did he miss a basic, he failed to listen, even though he said, "Okay."

"Top Chef" alum Marcel Vigneron is back and headed to Syfy with a brand new show called "Marcel's Quantum Kitchen," debuting Tuesday (Mar. 22). The show will feature elaborate and over the top food as Vigneron shows off his unique brand of molecular gastronomy, which combines science and cooking.
Now leading his own catering company, Vigneron will face challenges as demanding clients require him to put forth extraordinary dishes for some lavish events. The chef will need to dream up not only a menu, but dazzling executions as well.
"It's all about creativity, imagination, teamwork and catering some pretty cool parties," Vigneron tells Zap2it of his new show. Adding, "It's pretty grandiose-o."
For the premiere episode, Vigneron will pull together an event aimed at increasing awareness for the Wildlife Waystation, an exotic animal refuge and sanctuary. Naturally, his team puts together a safari-themed party complete with an edible map and "Himalayan Tiger's Breath,...

When I published my interview with molecular gastronomy chef Marcel Vigneron yesterday, almost immediately, someone posted a comment asking "What is a cooking show doing on Syfy?"
Good question. SyFy has suffered from channel drift lately, and since its infamously inside-the-box name change has gone away from pure science fiction programming. And, while it's hard to classify 'Marcel's Quantum Kitchen,' it's most assuredly not a cooking show. Marcel and his crew are not trying, for instance, to instruct you in the fine art of making a 30-inch long noodle made of wine or how to make a tree trunk out of beef tenderloin, braised short ribs and some meat glue.
If you take the show for what it is -- a reality show about a very unusual chef and his crew -- and bring with it a "how did they do that?" attitude, you will likely find 'Quantum Kitchen' entertaining.

On two seasons of Top Chef, Marcel Vigneron made a memorable impression as the culinary mad scientist with mad skills in the kitchen.and a habit of rubbing everyone the wrong way. But that.s reality TV history. On his new SyFy show, Marcel.s Quantum Kitchen, Vigneron is, at last, both the star and the boss. It all brings him one step closer to intergalactic domination. We talked to Vigneron about his far-out food, his prickly reputation, and, of course, his unnatural love of foams.

Marcel Vigneron is a busy guy these days. But even in his rush, he can appreciate some irony.

Like a lot of competition shows, Top Chef has pretty much lost me at this point. It seems the contestants come to the show already owning more and more restaurants, and the panel of judges never seem to reach the plateau of finding themselves interesting. But, whether you're still a big fan of the show or not, who can forget Marcel? His wild "molecular gastronomy" ideas and personality clashes made him one of the most memorable competitors the show ever had, and he's coming your way as Syfy kicks off a cooking show, Marcel's Quantum Kitchen.
If it's on Syfy, you know this isn't going to be just another cooking show. In fact, it's more in line with things like Ace of Cakes, as we find ourselves following along with Marcel's new catering company. Each week will find new clients, demanding new and bizarre masterpieces that push limits of the possible.
